published late last year. It’s a New Zealand export business founded by

Canadian partners.
KaiEtica Holdings Limited,
through its wholly owned subsidiaries, will produce and sell
ecologically sustainable ethical food products to North American clients
under its Supreme and Premium trademarked brands KaiEtica and Rustic
Chef. Sales will be made through their New Zealand subsidiary KaiEtica
Ltd.
Their value-add manufacturing will take place within their wholly owned
subsidiary in Alberta Canada, using the very best natural ingredients
from qualifying farms around the world. This provides significant
competitive advantages for the company.
For example, KaiEtica’s Canadian manufactured products are qualified to
be shipped with a 4-month fresh shelf-life (at 4°C), with a 2-year
frozen shelf-life beyond that. This conveniently enables ‘fresh product’
to be delivered to market all-year-round with the lowest transport
emissions. It also eliminates waste at the end of fresh shelf-life
periods.
Initial products
These will include a desirable range of ‘fully natural’ sous vide cooked
beef and lamb products. They will be manufactured using the very best
grass-fed New Zealand beef and lamb, and Canadian beef, with only the
goodness of the meat and natural jus incorporated in the cook process -
no other added ingredients, not even salt and pepper.
This fully natural product range will enable end-use chefs and cooks to
determine how they want to flavour their meat to table. It also usefully
minimises the product range and therefore shelf space supermarkets need
to provide. KaiEtica has also developed a wholesome ‘nitrite-free’ grass-fed corned meat product range.
The cooking process
Sous vide cooking seals in vitamins, minerals, and flavour, delivering
nutritional goodness with perfect texture and assured eating quality
every time. The process pasteurises food and provided it is kept sealed
and refrigerated it will remain good to eat within its use-by dates.
With this sous vide process, anyone can confidently prepare and serve
even difficult and expensive cuts of meat perfectly to table - for
example lamb loins and racks. Pulled meats are especially tender, and
often favoured by those who prefer a softer meat texture.
